Tomme Corse de Vannina 12 months
La Tomme de Vannina is produced with raw sheep milk in Corsica.It’s a farmhouse cheese, it’s only made between December and June with the “Corse” sheep breed, it has a delicate milky and lactic taste, with an olive taste that reveals itself while chewing. The final is herbaceous and smokey. This cheese is one of the jewels of our collection both for its stunning balance and the kindness of Vannina and her family and we’re very happy to offer it!For this tomme, Vannina adds some peppercorns from Penja to the curds and matures it. It brings a mild peppery taste as well as the spicy flavors of Penja pepper !
